Born from a challenge to center a sauce on grapefruit, Pompous Dragon uses pamplemousse with restraint, letting dragonfruit and other fruits build body and sweetness. Finished with a balanced sweet heat from scotch bonnet peppers, it’s vivid, playful, and composed.
Garden Era is inspired by Chicago-style giardiniera, blending vegetables and bright herbs into a sauce that tastes like a salad in a bottle. Fresh, tangy, and layered, it’s finished with a pleasant, citrusy heat from aji limón (lemon drop) peppers.
Built on slow-smoked chipotles, this sauce pairs deep, savory heat with a touch of orange juice and a supporting cast of peppers to soften the smoke and bring balance. Warm, complex, and quietly nuanced.
